Vegan Pizza Pockets!

Hey you guys! guess what? I am on youtube now! yay! and I did my first video (still a beginner so bare with me, I will get better at this) making a pinterest recipe for Vegan Pizza Pockets, and they were super easy to make and delicious! hope you enjoy it and the ingredients for the dough is below the video!

Vegan Pizza Pocket

Ingredients

  • 2 ½ cups organic all-purpose flour
  • 1 cup warm water
  • ½ teaspoon coconut sugar or brown sugar
  • 1 ½ teaspoon active dry yeast
  • ¼ teaspoon sea salt
  • 1 teaspoon refined coconut oil – melted

Directions

  • Add the warm water and sugar to a large bowl and mix. Sprinkle the yeast over the water and let sit for about 10 min, or until the yeast is foamy and active.
  • When the yeast is active, add in the salt and oil and mix.
  • Now add a cup of flour to your bowl and mix well. Add the remaining flour, half a cup at a time, mixing until a dough forms.
  • Take the dough out of your bowl and kneed on a floured surface for 5-7 min. (or you can skip this step and add everything to your stand mixer)
  • Place the dough in a clean and oiled bowl. Turn the dough over and coat the other side in oil.
  • Cover with a clean kitchen towel and place in a warm spot to rise for an hour. (I place my bowl in the oven with only the light on)
  • While the dough rises, prep the sauce and veggies

Green Smoothie Recipe.

These smoothies have become my go to Breakfast every morning since they are so easy to make and allow me to get a great dose of vegs early on.

I paired the smoothie with a piece of whole grain bread toasted with vegan butter. this butter, THIS BUTTER! it is amazing! I find it to be even better than the real deal!

Green Smoothie

  • Servings: 1
  • Time: 5mins

Perfect fresh start in the day.

Ingredients

  • 1 1/2 Bananas (frozen preferably)
  • 1/2 cup Pineapple (or 4 to 5 chunks)
  • 1 cup of Kale
  • 1 cup Spinach
  • 1/2 cup Water (add more or less depending on desired consistency)

Directions

  1. The first thing is to prep your bananas the night before putting them in the freezer!
  2. after that you will want start putting your ingredients starting with the water, then the fruit and then the greens.
  3. Blend Blend Blend! until you get the smoothie consistency.
  4. in the end I added a tsp of maple syrup because my pineapple wasn’t that sweet and I felt it needed it, but this is optional

Why I’ve been MIA? well, here is why!

For the past couple of day I’ve been in an adjustment phase due a to huge decision I’ve taken that will change my life for ever and is that… I’ve gone VEGAN you guys!

Let me tell you a little bit more of how that came to be. When June started, it became a really slow month of work at the place where I worked leaving me with a lot of time to watch YouTube and read a ton. so a as days went by and I watched videos, in my YouTube feed started appearing a ton of “what I eat in a day” videos and videos with the term “Vegan” in them. At first I paid no attention to the ones tittles vegan in them because I honestly wasn’t interested and watched the “WIEID” videos until one day I came across a video from JessBeautician (she is amazing and so sweet) and loved how lovely her meals were and they were all VEGAN! so I was like OK, this is kind of a sign… let me look into this thing! and started digging up on YouTube to see if someone was well informed to absorb all that knowledge and see what all that was all about!

In my search I came across a video from Carly Byble saying she has gone vegan, the reasons and thanking YouTubers Natasha and Luca “That Vegan Couple” for her conversion from vegetarian to full on vegan. As it was to be expected, I searched for their channel and was hocked! Everything they said was fed to you in such a kind and “I want to teach you” kind of way and I loved that! So I watched most of their videos and when I came across a video response they made directed to a misinformed girl that has P.C.O.S and claimed veganism made it worse, I felt like that video was specially made since I have that condition and have struggling for years with it, and that’s when it REALLY HIT! I thoroughly looked into the vegan lifestyle and saw the “Best Speech You Will Ever Hear – Gary Yourofsky” and it sealed the deal for me! It is a very graphic and very strong speech but it is filled with truth and facts about how it all works now, and how it is supposed to be working!

I am still in the Learning/Transitioning phase and will take time to learn all about it but I am 100% committed to it, I’ve cut out meat, dairy and eggs and it has been a great decision.

First Vineyard Experience!

My heart jumped with excitement this past Saturday because we were going to have such an amazing experience at the Ocoabay Vineyard and Club. Me and my boyfriend had a tour of their vineyard and to have a wine testing of their own wine after the tour of the complex. Everyone was super nice and gave us a ton of information about the place and wine. In the pictures you are going to see that the place is gorgeous, paradise indeed! We really loved it. Just wanted to share pictured with you guys!

Seeing where the wine was made and hear the whole process was really cool to us, it was something we’d never seen before (at least not in person) so we were super excited to go in to see the machines and later the bodega to have the wine test.

Is there a balance between foodie and Skinny B°tch?

And I wonder… Does such a thing exist?

My whole life I’ve struggled with a few extra pounds that I’ve wanted to get rid off to feel better, to look better, but I’ve never managed to keep it together long enough to look the way I want to. Am I meant to look this way for ever? am I just not built for fitness? where is my will power? and if anyone sells jars of it, where the heck do I get some!?

Ever since I was like 15 or so, I’ve been looking for ways to loose the weight and tried all the crap I found online like:  no carbs diet, liquids diet, raw diets, and so on.. last year being the year of the fitness revolution and dietitians bombing on us that we can we wanted as long as “It Fit Your Macros” the whole thing is extremely confusing and I just cannot live my life counting all the calories I am consuming and keeping track of things like this and not completely enjoying them. when I know people where willing to go to extremes is when I started seeing couples with an electronic food weight weighing their meals at restaurants… NO! that is not for me!

And then, there is the working out part! the lowest I’ve been weight wise was at 130 pounds being 5’8″ tall and that was me working out 2 hours a day at the gym, I did body combat for an hour as my cardio and then weights… that weight was pretty low and I still hadn’t gotten rid of the problem.. so I gave up and now I am back to a lovely 165 pounds! 35 extra pounds gained in a period of 9 months. I had such a great time eating all the things I wanted and not having a care in the world.. the problem started when I couldn’t fit into my clothes… that was like a wake up call to do something, the thing is I am not that excited to eat extra healthy again and workout like a maniac everyday!

I think everyone wishes there was a magical potion or way to keep the weight off without compromising… but seems like there are no short cuts! sad ain’t it!?

Plantain Mini Baskets

These little baskets may not be the healthiest thing in the world but they are pretty yummy and are good to serve as finger food or company to any dish!

Plantains are such a latin american vergetable? that it maight be difficult to find in some countries if you don’t go to a farmers market or a market that imports from all over the world.

The pico de gallo on the other hand is one of mayfavorite things to have! It goes with everything!

While making the little baskets I like to rub some garlic to give them some extra umph.

Plantain Mini Baskets with Pico de Gallo

  • Servings: 12
  • Time: 45mins
  • Difficulty: Medium
  • Print

Perfect for party finger food or accompany a main dish

Ingredients

  • 2 Plantains
  • 2 Cloves of Garlic
  • 1/2 Large Tomato diced
  • 1/4 cup chopped fresh Parsley
  • 1/4 small Red Onion diced
  • 2 small limes
  • 1/2 tsp. White vinager
  • Salt to taste
  • Vegetable Oil

Directions

    For the Plantain Baskets:
  1. The first thing is to set a deep skillet with vegetale oil on the stove on medium heat.
  2. While the oil is heating up, peel the plantain and then cut them in about  1 1/2 inch thick slices.
  3. Once the oil is boiling hot, place carefully the slices in the oil until the get a yellowish gold tosty look. (See photo for that weird color description)
  4. As soon as the achieve that color, get them out on to a paper towel to cool down a bit. (IMPORTANT TO LET COOL DOWN)
  5. Now that they have cooled, with the help of your fingers or a round object, push the middle and start making the baskets.
  6. At this moment trun on the fire again to fry them again until crispy.
  7. For the Pico de Gallo:

  8. Dice your tomato and Onion in little cubes and shop your parsley thinly.
  9. On a bowl, trow together the diced Onions and Tomato, the shopped Parsley and add the juice of the two Limes, the Vinager and Salt.

Note: The trick to this is to have equal parts of onions to tomato and putting it on the fridge to chill for a while, that lets all the juices soak onto the vegs.
